Tomato Basil soup-Maryana Vollstedt (From the big book of soups)
3 tbsp butter
1/2 cup minced onion
1/2 tsp minced garlic
3 tbsp flour
2 cups chicken broth
3 lb tomatoes
3 sprigs parsley
1 tsp sugar
1/2 tsp salt
1 tbsp fresh thyme
1 tsp dried basil (or 1/4 cup chopped fresh basil)
1/4 tsp paprika
1 bay leaf
3 drops tabasco
ground pepper
Instructions: Saute the butter, onion, and garlic until tender. Stir in flour and blend until bubbly. Add stock (2 cups water and 2 tsp better than boullion) and stir.

Add remaining ingredients, reduce heat to medium-low and simmer covered for 30 minutes.
