WILD RICE WITH APPLES
1-2/3cup water
2/3cup apple juice
1tbsp olive oil
1 apple
3/4cup wild rice
Chop the unpeeled apple into 1/2 inch pieces. Combine all but the rice in a medium saucepan and bring to a boil. Add the wild rice, reduce heat and simmer covered for about 25 minutes (or until the liquid is absorbed).
PORK CHOPS
6 boneless pork chops, 1/2 inch thick
2tsp seasoning
2tbsp vegetable oil
1/4cup apple jelly
1tbsp dijon mustard
Rup both sides of the pork chops with seasoning of choice. Heat oil in medium fry pan. Cook pork chops 4 to 5 minutes on each side and remove from pan.

Add the jelly and mustard to the fry pan, cook and stir for about 2 minutes until thickened and bubbly. Pour over the cooked pork chops.
