3/4 | cup | flour |
1 | tsp | vanilla |
1-1/2 | tbsp | sugar |
1/2 | tsp | salt |
1 | tsp | baking powder |
1 | tsp | nutmeg |

Combine oil, eggs, milk, flour, and vanilla in a large bowl. Combine sugar, baking powder, nutmeg and salt in a small bowl. Gradually stir in the sugar mixture. Let batter stand for 30 minutes minimum.

APPLE TOPPING |
1/4 | cup | butter flavored shortening |
2 | | apples |
1/3 | cup | sugar |
1/2 | tsp | cinnamon |
1/2 | tsp | nutmeg |

Grease a 9x13 inch baking dish and preheat oven to 425 degrees F. Peel, core and slice the apples. Combine the sugar and spices in a small bowl.
Melt the shortening in a frying pan on the stove over medium heat, and add the apple slices. When the apples are starting to get soft pour them into the prepared baking dish, lining the bottom with the apples. Sprinkle the apples with the sugar mixture.
Gently pour the batter over the apples. Bake at 425 for 15 minutes, reduce temperature to 375 and bake an additional 10 minutes.
