|BUTTERMILK PANCAKES (makes 12 pancakes)|
Beat egg till thick and lemon-colored, add buttermilk and salad oil. Stir in dry ingredients mixing till smooth.|
Drop by spoon onto moderately hot griddle (375). Spread batter evenly to make 4 inch cakes. Turn when top is full of bubbles. Remove when bottom is light brown.
Spread with butter and add maple syrup.
