BUTTERMILK PANCAKES (makes 12 pancakes)
1 egg, beaten
1/2tsp salt
1/2tsp baking soda
1tsp baking powder
1tbsp sugar
2tbsp vegetable oil
1cup flour
1cup buttermilk
1/3cup blueberries
1/3cup wild rice, cooked
Beat egg till thick and lemon-colored, add buttermilk and salad oil. Stir in dry ingredients mixing till smooth.

Drop by spoon onto moderately hot griddle (375). Spread batter evenly to make 4 inch cakes. Turn when top is full of bubbles. Remove when bottom is light brown.

Spread with butter and add maple syrup.
