Instructions: Beat eggs, disolve soda in hot water and add to egg mixture.
Mash the bananas with a fork until mushy and add to the mixture, combine the remaining ingredients into the mixture.|
Loaf: Pour the mixture into a greased loaf pan, preheat oven to 375 degrees, bake for 1 hour.
We have used 4 small loaf pans 3 inches x 6 inches and have reduced bake time to 20 minutes. (12/9/18-update to 30 minutes)
Muffins: Spoon the mixture into muffin cups, preheat oven to 400 degrees, bake for 1 hour.
Yield: 1 loaf or 18 muffins.
Note: When the bananas become too soft to eat, you can freeze them until needed.
