SIZZLIN SZECHUAN SHRIMP - Judy LeMoine
2 lb medium sized shrimp (peeled, deveined and detailed)

1/2 cup water
1/2 cup catsup
1/4 cup sugar
1/4 cup chili sauce
2 tbsp corn starch
3 tbsp dry sherry
1 tbsp soy sauce
2 tsp sesame oil

1/4 cup vegetable oil
6 green onions, chopped
3 garlic cloves, minced
1 8oz can water chestnuts, drained and chopped
1-1/2 tsp dried crushed red pepper
1 tsp minced gingerroot
1 tsp cracked black pepper

cooked rice
Combine water and next 7 ingredients. Mix and set aside.

Heat oil and add next 6 ingredients. Stir fry for 3 minutes.

Add shrimp and stir fry for additional 3 minutes then add catsup mixture. Cook 1 minute stirring constantly until thickened.

Serve over rice.
