ROLL-UP PANCAKES (makes 12 pancakes)
3 eggs, beaten
1/2tsp salt
1tbsp sugar
3/4cup flour
1-1/4cups milk

4 eggs, beaten
2/3tsp salt
1-1/3tbsp sugar
1cup flour
1-2/3cups milk
Beat eggs till thick and lemon-colored. Stir in dry ingredients mixing till smooth. Stir in milk to thin (add about half of the milk and stir to consistancy then add the rest of the milk).

Drop by ladle onto moderately hot griddle (375). Spread batter evenly to make thin 8 inch cakes. Turn when underside is light brown.

Spread with butter and sprinkle with cinnamon and sugar.
